Capitalizing on the crossroads of the past and future, Hotel La Jolla is cooking up its new restaurant Sea & Sky, timed for a January opening.
The fine-dining concept on the hotel’s 11th floor is part of the 50-year-old property’s multimillion dollar, full scale renovation.
In addition to offering coastal cuisine, Sea & Sky will also take advantage of its “amazing, west-facing panoramic view of La Jolla Shores,” said Hotel La Jolla general manager Adam Lund.
In contrast to Cusp, the previous restaurant in that space, the owners of Hotel La Jolla, Curio Collection by Hilton, who took over the property in September 2021, have planned for Sea & Sky “a more modern feel,” Lund said, opening up more room in the lounge area.
Sea & Sky will also feature retractable window panes for “an indoor-outdoor feel,” Lund said, along with a newly enclosed show kitchen.
The new restaurant will also have a space meant as a “focal point for private gathering celebrations [and] corporate type meetings,” he said.
Sea & Sky will be “a beautiful place to dine,” Lund said.
Though the culinary team has yet to be solidified, the menu will include seasonal items highlighting “the bounty of products that we have” along the Pacific Coast, Lund said, telling a story of “all the wonderful things Southern California has to offer.”
Sea & Sky will also expand the hotel’s brunch programming, he said.
Noting Hotel La Jolla’s decades-long presence in the community and that most longtime residents “have a story” there, some of those brunches might be jazz-themed, to “really pay homage to the old days of Hotel La Jolla” and Elario’s restaurant, which was a jazz music staple in the area, he said.
The new owners, Lund said, have “this vision of bringing the hotel … back to being relevant and being on the scene; to embrace the past and look forward.”
