Authentic yet adventurous: Ambrogio makes Michelin local

A concept designed to infuse The Village with Michelin talent in a more casual, piazza-like environment, Ambrogio by Acquerello is poised to showcase a menu like no other.

Continuing its presence as a culinary pioneer in La Jolla, Ambrogio by Acquerello’s next fusion will make a Michelin feast of local ingredients.

Ambrogio by Acquerello will host a one-night only “4-Hands Dinner” with seatings at 5 and 8 p.m. Tuesday, April 30, with two renowned Italian Michelin-starred chefs, Chef Silvio Salmoraghi of Acquerello in Milan and Chef Fabio Ugoletti of Mar’Sel at Terranea Resort.

The eight-course signature tasting menu, with vegetarian and vegan menus available upon request, will feature the chefs’ Italian roots while highlighting local and seasonal ingredients.

The dinner, $245 per person, will capture “the best San Diego has to offer,” said Ambrogio’s general manager Mariana Dib, with the chefs – who enjoy playing “around with the old world and new world” – alternating courses to showcase their unique approaches to cuisine. 

The event’s design is in keeping with Ambrogio’s focus on modern Italian gastronomy with traditional techniques.

Established in late 2022 in La Jolla, Ambrogio by Acquerello is the stateside iteration of Michelin-starred Acquerello, opened outside Milan by Salmoraghi and Chef Choi Cheolhyeok of South Korea in 2008.

The San Diego version employs the same modern Italian creativity with Asian influences, served on the elegant Fay Avenue patio, the private chef’s table within the open kitchen space or the indoor, Asian-inspired dining room.

The result is two eight-course tasting menus: “Dancing with the Stars,” Ambrogio’s signature presentation; and “A Walk in the Garden,” the vegetarian version.

Ambrogio offers a four-course option Tuesdays through Thursdays. 

Wine pairing options with a diverse tasting are also available, along with an extensive wine list and cocktail menu including Italian classics, sake and imaginative takes like the “Mistaken Negroni” made with prosecco.

The La Jolla response has been great, Dib said, with locals and those traveling from other counties and states keeping many nights booked.

Ambrogio is worth the trip, Dib said, as “the food that we’re showcasing here is quite unique, … far beyond” the traditional.
